This recipe for a bacon and sausage quiche uses a store-bought pie crust and makes an easy weeknight meal as well as a great breakfast!
My child loves eggs. He will eat an egg in almost any form and fashion. So, I’m always searching for new and fresh ways to serve them up to him! I love to make quiches, and his all-time favorite egg dish I make is a bacon and sausage quiche.
This bacon and sausage quiche makes for an easy breakfast or weeknight dinner. It implements a store-bought crust to save you time. Now, if you wanted to make your own pie crust, go for it! I do not have that kind of time, so Pillsbury it is!
For the record, I went to a book signing from Damaris Phillips, and I heard her whisper to the people in front of me that she uses Pillsbury when she’s in a pinch. So if the queen of southern cooking does it, so can you.
I found this recipe in Taste of the South magazine, the March/April 2013 issue. I’ve been making it ever since.
Equipment You’ll Need to Make This Quiche
- mixing bowl
- a whisk
- pie plate (I use a deep dish version for this, so it isn’t spilling over the sides.)
Bacon and Sausage Quiche Recipe
As adapted (barely) from Taste of the South:
Quiche Ingredients:
- 1 1/2 cups of cheddar cheese
- 1 1/2 cups 2% milk (the original recipe called for whole milk, but I never keep it on hand – and the 2% works fine)
- 1 tablespoon of flour
- 4 eggs
- 4 slices of bacon, cooked and crumbled
- 1 cup of breakfast sausage, cooked and crumbled (we use the mild version in this house, but you could use a spicier version if you wanted)
- pie crust
Go ahead and make your bacon and sausage. (I usually make my bacon in the oven). Drain the grease on both. I just drain them on a plate covered with a paper towel.

Lightly spray your pie pan, and you can put that Pillsbury crust right in.
Meanwhile, beat your four eggs. Whisk in your milk.
In a separate bowl, toss your cheese with the flour.

Then, dump it in your egg and milk mix.
Add the cooled bacon and sausage.
Mix it all together. Pour into your crust.

Bake it for an hour at 350 degrees.
